Buy a boatload of disposable cameras and put them out for guests to use. You'll end up with 2,182 pictures of someone's thumb, and 8 utterly amazing shots that the professional would never have gotten because s/he can only be in one place at a time, and that's generally "near the bride/groom, facing them".
You can do this in addition to or instead of a professional. Consider it the Open Source version of wedding photography. :>
We decided that instead of doing the disposable cameras, we're getting a digicard reader (one that'll accept multiple sizes/formats) and hooking it up to a laptop at the reception. A lot of people will bring digital cameras, and this is one way to get those pictures immediately instead of tracking people down for them. And then we've got the card reader to keep. :)
